Swedish Lemon Squares

  • 1/2 cup butter
  • 1 cup flour
  • 1/2 cup confectioners sugar
  • 2 eggs, slightly beaten
  • 1 cup granulated sugar
  • 3 tablespoons lemon juice
  • 2 tablespoons flour
  • 1/2 teaspoon baking powder

Melt butter in an 8x8x2-inch pan; mix in 1 cup flour and confectioners sugar and pat evenly. Bake at 350F for 18 minutes, until very slightly browned. Combine remaining ingredients; pour over the baked crust and return to oven for 25 minutes. Cool, cut into squares and sprinkle with confectioners sugar.

Makes 16 2-inch squares.
